Bigger is Better as Whale Crabs, Those Giant Soft-Shells, Are Back at Sushiko Chevy Chase
"Whale" crabs, the fish monger's term for the elite, colossal size soft shell crabs, which have a limited season harvested from Maryland’s waters, have arrived at Sushiko Chevy Chase. A summer treasure, the entrée Whale crab served is priced at $17; each requires special treatment to maintain their intense flavors and delicate texture.
Brothers Piter and Handry Tjan, co-executive chefs at Sushiko have mastered the correct cooking approach to showcase these crabs, which are prepared "Kara-age" style. In this preparation, the soft shell crab is first lightly dusted with potato starch and then flash fried to achieve a light crisp exterior. This way the meat stays juicy and shells are crispy and light. Sushiko serves them with a house-made ponzu sauce, which is designed to bring out the “sweetness” of the crabmeat. One can enjoy these during lunch and dinner service.
Sushiko is located at 5455 Wisconsin Avenue, Chevy Chase, Maryland, 20815 and is easily accessible from the Friendship Heights Metro station. The first two hours of parking are free when dining at Sushiko.
