ThinkFoodGroup's America Eats Tavern Opens in Georgetown

Chef José Andrés’ Ode to America Features Barbecue, Regional Specialties

José AndrésThinkFoodGroup yesterday announced the opening of America Eats Tavern, located in the heart of historic Georgetown at 3139 M Street, NW. America Eats Tavern offers inventive riffs on historic and iconic American dishes with a focus on the mid-Atlantic region. In this newest iteration, America Eats Tavern additionally features a selection of barbecue.

America Eats Tavern is led by Head Chef Claudio Foschi, who returns to the team after previously serving as Head Chef of America Eats Tavern at the Ritz Carlton in Tysons Corner, Virginia. Chef Foschi, who has worked with ThinkFoodGroup for four years, also worked in the kitchens of minibar and Zaytinya.


“We couldn’t be more thrilled to open our doors in Georgetown, which has always been a dream of mine since I first arrived in Washington, DC,” commented Andrés. “The menu reflects the culinary history of this incredible country, and my team and I are so excited for guests to experience our take on classic American dishes and the rich stories that inspired us.”

Inspired by everything from historic and iconic cookbooks to family recipes and national archives, Chef Andrés and the ThinkFoodGroup team conducted extensive research to craft the menu at America Eats Tavern and find the best purveyors and products. The barbecue menu itself takes a page from Sarah Rutledge’s classic Southern cookbook, The Carolina Housewife, published in 1847. Highlights include Brisket from Creekstone Farms, KS, Pulled Pork prepared with a simple dry rub with warm rye bread, pickles and house barbecue sauce, Ribs, available by the half and full rack, and more. Guests can also enjoy signature dishes including Skillet Cornbread, Chesapeake Crab Cakes inspired by the Lord Baltimore Hotel in 1932, Fried Catfish sourced from the Chesapeake Bay, and a selection of oysters. Rounding out the menu is a regionally focused selection of beer, wines, and spirits, hand-picked by ThinkFoodGroup’s Director of Beverage and Master Sommelier Andy Myers.

The two floor, 193-seat dining room and outdoor patio bar space was designed by the DC- and California-based SAINT (Studio for Architecture and Interiors) as a casual, community gathering place for great American food and drink. The décor was imagined as a patchwork composition of art, color, craft and furnishings that elicits nostalgia, moments of yesteryear, and a sense of adventure and idealism - a great cross-country road trip inspired by the American Spirit.

Launched in 2011 in collaboration with the Foundation for the National Archives, America Eats Tavern’s first iteration was as a pop-up in DC’s Penn Quarter. From there, Andrés and his team brought the concept to the Ritz-Carlton Tysons Corner in McLean, VA. Now, the Georgetown location of America Eats Tavern offers the concepts latest iteration, a more casual, rustic experience in a truly historic building and neighborhood.
