Silver Launches New Menu with 10 Plant-Based Dishes Including Four with Beyond Meat® Products

Silver’s Executive Chef Ype Von Hengst launched another innovative menu for his two Silver, American Brasserie locations (Silver Bethesda: 7150 Woodmont Avenue and Silver Cathedral Heights: 3404 Wisconsin Avenue, NW, Washington, DC.) This new menu includes 10 plant-based options and four dishes using Beyond Meat® (a breakfast Beyond Meat Italian Sausage Scrambler with Just Egg; Pesto Meatless Meatballs; Beyond Meat Italian Sausage Plus Cappelini; and a Beyond Meat Baja Burger.)

Executive Chef Ype Von Hengst has become known for listening closely to customer feedback and responding with innovative menus that include new healthy trends as well as much-loved classics.


Recently, Seth Goldman (co-founder of Honest Tea and Executive Chairman of Beyond Meat) stopped by Silver to visit with Von Hengst and try some of the new Beyond Meat dishes. The two also shared the stage at the recent Wharton DC Innovation Summit. Goldman was very impressed with the new Beyond Meat dishes, commenting, “It is wonderful to see (and taste) Chef Ype’s creations. He has designed some of the most delicious Beyond Meat dishes I’ve ever had. My wife and I were blown away by the Pesto Meatballs!”

Other dishes include a cauliflower steak entrée; a cauliflower steak sandwich; a warm roasted local veggie salad; cauliflower mezze; edamame and white bean hummus; crispy brussels sprouts; and oven roasted tomatoes.

“Some of our customers want to cut back on the amount of meat they consume,” Von Hengst explained. “Others are vegan or vegetarian and still others want to be able to enjoy a great angus cheeseburger or pickle fried chicken sandwich - we’ve made sure that we have something for everyone.”

Von Hengst added more vegan, vegetarian, gluten-free and lower calorie items to Silver’s menu. Now, he’s expanded on those items with even more options while also improving the classic dishes that many customers crave.

“For me, it’s all about great food and keeping all of our customers happy,” said Von Hengst.
