Bastille Hosts Resolution Reds Dinner
Five courses paired with winter reds
Studies have shown that red wines are good for the heart. Just in time for American Heart month and for Valentine’s Day hues, not to mention New Year’s resolutions, Chef/owners Christophe and Michelle Poteaux of Bastille present ‘Resolution Reds,’ a five-course meal paired with red wines. The Resolution Reds dinner will take place on Thursday, January 18th and is priced at $59 (taxes and gratuities not included.) The dinner begins at 6:30 PM.
The menu begins with an Amuse-Bouche of wild mushroom and goat cheese roulade paired with Chateau Puy Servain Rose 2016 (70% Cabernet Sauvignon, 30% Merlot) followed by ‘Le Cochon’ - slow-roasted pork belly with paprika rub, sweet potatoes and onions in pork fat and spices with Brussels sprouts paired with Cuvée Mathilde, Domaine de L’Amandine, Vaucluse, 2016n (40% Merlot, 20% Caladoc, 20% Cabernet, 20% Grenache); ‘les gnocchi aux topinambourgs’ - sautéed potato gnocchi in garlic butter, with roasted Jerusalem artichokes, Lacinato kale, sunchoke chips and parmesan with Cuvée L’Argentière, Domaine Coste Chaude Visan, Cotes du Rhône Villages 2012 (80% Syrah, 20% Grenache); ‘L’agneau en Daube’ - lamb shanks simmered in a red wine-spiced sauce with celeriac puree, braised celery and carrots paired with Mas de Guiot, Pays du Gard, 2012 (60% Cabernet, 40% Syrah) and ending with Chef Michelle’s delicious and decadent dessert of ‘Dome au Chocolat’ - Valrhona Manjari chocolate mousse, with orange marmalade and chocolate feuilleté paired with Domaine Rolet, Macvin du Jura Rouge NV (100% Poulsard, blended with Marc.)
