Chef Randall Matthews to Host a Week-Long Pop-Up Dinner Series at All Set Restaurant & Bar

All Set Restaurant & Bar, located at 8630 Fenton Street, Plaza 5, Silver Spring, Maryland 20910, has recruited friend and Maryland native Randall Matthews, formally of The Mina Group and True Food Kitchen, to host a pop-up dinner series at the restaurant this February. Guests are encouraged to come dine at the restaurant, between February 26th and March 4th, to enjoy Matthews’ menu, which will showcase a creative twist on American fare while reflecting a passion for fresh ingredients, and memorable flavors. Standout dishes include Roasted Parsnip Agnolotti with crispy bacon jam, black truffle butter and chives; Charred Cauliflower Tartine with caramelized onion crème fraîche, harissa spice and house-made focaccia; Moroccan Spiced Lamb Shank with golden coco beans, “burnt” cipollini onions and mint, and the Ultimate Macaron with compressed pear, salted almonds and dark chocolate. Additionally, guests who dine at the restaurant on Wednesday, February 14th will get an advanced preview of his pop-up dinner menu as Matthews will serve a special prix fixe offering as part of All Set’s Valentine’s Day celebration.

A native from District Heights, Maryland, Randall Matthews began his professional culinary career as chef de partie at The Greenbrier Hotel & Resort in White Sulphur Springs, West Virginia. From July 2010 to January 2011, Matthews worked under the leadership of Certified Master Chef Richard Rosendale, the youngest executive chef to ever serve at The Greenbrier.



Upon graduation from The Culinary Institute of America, Matthews returned to Maryland where he served as a banquet sous chef at The Country Club at Woodmore. Shortly thereafter, he was tapped for a position at Bourbon Steak, the Michael Mina steakhouse at Four Seasons Hotel Washington, DC. For the next three years, Matthews assisted with creating and maintaining seasonal menus for the $12 million revenue establishment. Matthews began work as a line cook working his way up to senior sous chef, under the guidance of Executive Chef Adam Sobel, before relocating to San Francisco, California to serve as corporate executive sous chef for The Mina Group, LLC.

From October 2014 to January 2017, Matthews assisted in 15 restaurant openings around the world for The Mina Group. During his three-and-a-half-year tenure, he assisted with day-to-day operations for the 30+ establishments within the company and was responsible for more than 120 chef managers and 2,000 line-level employees.

Then in January 2017, Randall Matthews returned to Washington, DC to serve as executive chef for James Beard Award-nominated Restaurateur Sam Fox of Fox Restaurant Concepts. In June 2017, he opened True Food Kitchen, and was praised by Tom Sietsema in The Washington Post’s 2017 Fall Dining Guide, “Randall Matthews brings serious chops... count on his fish tacos, grain bowls and pizza to taste as good as they look.” In December 2017, Matthews launched his own hospitality and consulting group, Ten24, LLC, which hosts both small-scale and large-scale events for private clients.

All Set Restaurant & Bar is located at 8630 Fenton Street, Plaza 5 Silver Spring, Maryland 20910, four blocks from the Silver Spring Metro accessible on the Red Line. Lunch is available Monday through Friday, from 11:30 AM to 3 PM, and dinner is served Monday through Saturday, from 3 PM to 10 PM, and Sunday, from 4 PM to 9 PM.
