ABOUT CHEF SARA PEREZ:
Born and raised in Gasteiz, Vitoria Spain, Chef Sara Perez knew she wanted to be a chef at the age of 16 as a result of having access to a wide variety of gastronomic and cultural influences in the Basque Country. Chef Perez attended culinary school at Diocesanas Mendizorrotza and to help pay for the cost of her schooling she worked in local restaurants specializing in preparing pintxos. Perez spent her summers traveling and working in Noja Cantabria. She developed a passion for working in kitchens preparing food for guests. One of her mentors is Angel Fdz de Retama - a professor from one of Europe’s top culinary schools. While chef Perez studied in culinary school, she participated in work training at Four Star Hotel Villa in Rioja, Spain. In addition, she studied for two years to learn about pastries and desserts. Upon the completion of her culinary training, she worked at Gora Taberna in Vitoria, which specializes in pintxos and vegan dishes. She was then offered a job in San Sebastian at Fuego Negro as a pintxo chef. She also worked in the Cuchara de San Telmo in San Sebastian and other notable restaurants. Chef Perez also has certification in Cortadores de Jamon. Presently, Perez is running the kitchen of Mercado Tolosa specializing in pintxos using seasonal ingredients. After participating in gastronomic week at SER Restaurant in Arlington, Virginia, Chef Perez plans on relocating to Barcelona to pursue a variety of other challenges working in additional established restaurants.
