Chuy's Celebrates 28th Annual Green Chile Festival

Five New Menu Items Available for a Limited Time, Made with Green Chiles Straight from the Harvest

Chuy’s 28th Annual Green Chile Festival will kick off Monday, August 15, and run through Sunday, September 4, at all Northern Virginia locations (Fairfax, Springfield, Woodbridge & Sterling.) The annual food festival celebrates the green chile harvest in Hatch, New Mexico, with a special menu offered for a limited three week period.

This year’s menu features five new dishes including queso fundido, Spanish chicken enchiladas, and green chile street tacos with steak carnitas, cotija cheese, tomatoes, roasted green chiles and cilantro, served with green chile rice. To cool down on a hot festival day, Chuy’s will also feature a frozen pickly pear rita and New Mexican martini, made with green chile infused tequila.


“Every year the Green Chiles we get from Hatch seem to get better and better and so does our Green Chile Festival menu,” said John Mountford, Director of Culinary Operations for Chuy’s. “Green Chiles are the heart and soul of our dishes. The flavor, texture and spice are unlike any other pepper and that’s why we look forward to the harvest all year long.”

Chuy’s love for the green chile dates back to 1989 when co-founders Mike Young and John Zapp were the first to bring Hatch green chiles to Central Texas. They created a special menu of dishes to serve during the heat of the season and the first annual Green Chile Festival was hatched.

As the first to host a green chile festival outside of New Mexico, Chuy’s commitment to offering the most flavorful pepper on the planet continues today. This year alone Chuy’s contracted with farmers to grow over 2 million pounds of the freshest green chiles just for their restaurants. Green chiles are harvested daily throughout the festival to ensure that guests get a taste of their unique flavor, straight from the farm to Chuy’s restaurants.
