From our friends at La Sandia...

Richard Sandoval’s authentic Mexican eatery, La Sandia, is pleased to debut its Guacamole Festival, which will run from April 11th through May 21st, 2016. The Festival will feature different guacamole dishes made with the beloved tropical fruit, the avocado, each highlighting regional flavors, making them the perfect addition to a spring meal. Dating back to Aztec times, the traditional Mexican dip was comprised of avocado, onion, chilies, fresh tomato, and salt. Over time, regions of Mexico began mixing local ingredients, creating thousands of variations, which have grown in popularity.

Guests can opt for the Chunky Guacamole with avocado, heirloom cherry tomato, pickled pearl onion, radish, roasted Serrano pepper, fresh lime, micro cilantro, cotija cheese and tlayuda; Guacamole Huarache with crispy chorizo, queso panela, roasted corn, radish salad and pickled jalapeño; Sweet & Sour Guacamole with tamarind, piloncillo, fresh mango, caramelized pineapple, dry apricot and blood orange segments, served with banana plantain chips; Guacamole Verde with aguachile sauce, shrimp, fresh jalapeño, baby cucumber, pumpkin seed, green garlic oil and pickled onion, served with cilantro tortilla chips, as well as the Guacamole Tostada Sampler, a sampling of all four guacamole flavors, served with mini tostadas, habanero salsa and tomatillo salsa. Featured guacamoles will range in price from $11.55 to $15.95. For the perfect libation to complement the dishes, guests can enjoy classic Latin cocktails such as Mojito Tradicional with Bacardi’s Castillo, sugar, fresh mint and lime; Red Sangria with red wine, brandy and fresh fruit, or the Margarita De La Casa with tequila blanco, agave nectar and fresh lime. Cocktails range in price from $7.55 to $25.95.

Additionally, restaurant-goers who snap a picture of their guacamole and upload it to Instagram using the hashtag #GuacFest16 and @LaSandiaRSR will have a chance to win dinner for two at the restaurant. Dinner for two includes two Margaritas de la Casa cocktails, one appetizer, two entrées and one dessert. Contestants must use the hashtag #GuacFest16 and @LaSandiaRSR to be eligible to win.
