Renowned Italian Chef Comes to DC in March

Famed Chef de Cuisine Roberto Villa visits Plume, March 1-5

From March 1-5, 2016, Washington, DC’s only five-star restaurant, Plume at The Jefferson Hotel will greet its guests with both “good evening” and “buona sera!” The Jefferson is collaborating with The Belmond Hotel Splendido Mare in Portofino, Italy to feature its world-class Chef de Cuisine Roberto Villa with an authentic Italian dinner menu inspired by indigenous ingredients and flavors found on the Mediterranean Coast.

For FIVE DAYS ONLY, Chef Villa will join Plume Executive Chef Ralf Schlegel in the kitchen of the upscale restaurant to create a dual menu: a shortened version of Plume’s exquisite menu, and one curated by Chef Villa featuring four Italian courses, served À La Carte. Villa’s menu will include specialty items such as: Warm lobster and prawn salad dressed with rosemary-flavoured olive oil; Baked layers of aubergine, tomato and cheese with fresh oregano; Baked fillet of sea bass with dry white wine sauce; Typical Ligurian rock fish thick soup with fillets of red mullet; Grilled tuna medallion with citrus, thyme and lemon.


As an additional Italian infusion, guests are encouraged to enjoy a special tasting of Italian olive oils, featuring selections from the Liguria, Tuscany and Sicily regions, and lead by The Belmond Hotel Splendido Mare’s Restaurant Manager, Calvia Luca, who will explain the history of this Italian custom and the varieties being presented.
