Ovations Offers a New Contemporary Dining Experience for Patrons at Wolf Trap

Thomas L. Gregg, CEO of Capital Restaurant Concepts (CRC), is pleased to introduce a contemporary dining experience for patrons of Wolf Trap National Park for the Performing Arts. This summer, Ovations Restaurant will offer two separate dining options for visitors of the 117-acre park, which welcomes over 80 performances across all genres each summer. Capital Restaurant Concepts’ newly appointed Corporate Chef Neal Langermann will oversee both menus, which include an elaborate buffet at Ovations, as well as four gourmet picnic baskets which are available for pick up before the show.

“We are very excited to bring a new buffet dining experience at Wolf Trap,” explains Thomas Gregg, CEO of Capital Restaurant Concepts. “The outdoor dining in the meadow is so beautiful, and we plan to pair the feel of the environment with the food and drink. We have traditional picnic fare along with sous-vide prepared entrĂ©es cooked to the perfect color, texture, and temperature. A signature cocktail or a bottle of wine from our pre-selected list will make for a truly memorable experience.”


The newly designed buffet offers a variety of dishes to satisfy everyone in the family, from the picky eater to the adventurous foodie. The restaurant is partnering with Cuisine Solutions, a leader in sous-vide prepared foods, to add a more contemporary “flavor” to the traditional buffet. Standout dishes this summer include Asian Beef Salad with baby arugula, peanuts, daikon, bean sprouts and a teriyaki-hoisin vinaigrette; Lamb Shank with Gigante white beans, braised kale, shaved peppers and lamb jus; Lentil Chili with oven roasted tomatoes; Teriyaki Salmon with julienned red peppers, scallions and soba noodles; Braised Top Blade Beef, served over pappardelle with tomatoes, spinach and bordelaise sauce; Georgia Brown’s Buttermilk Fried Chicken; Paolo’s Tomato Mozzarella and Arugula, served on a toasted baguette,as well as J. Paul’s Roast Beef Sandwich with garlic Boursin cheese, baby lettuce and tomato, served on a baguette. The buffet is priced at $32 per person, and $15 for children under 10 (beverages, tax and gratuity not included).

For the perfect pairing, Ovations at Wolf Trap offers an inviting wine list emphasizing the major wine regions of California, Italy, Argentina and New Zealand. 24 wines are available by the bottle with 22 wines featured by the glass. Prices range from $30 to $68 by the bottle and $8 to $17 by the glass. Additionally, four house-made, specialty cocktails are also available, including the Cosmopolitan, Stoli, Grand Marnier, blackberry liquor and a splash of cranberry; The Paul Red Handed, Stoli raspberry, St. Germaine, fresh strawberries and Champagne, and the Mojito, Bacardi, Triple Sec, lime and fresh mint, served over ice. Cocktails are priced at $13 each. Five bottled beers and two draft beers are also available for sipping.

Those who wish to take their meal to-go to enjoy during the show can select from four gourmet picnic baskets, each showcasing dishes from CRC’s sister restaurants: J. Diners will be prompted to select their show from a list provided, and then asked to select their picnic basket and proceed to checkout.
