Smith & Wollensky Restaurant Group rings in 2015 with an unprecedented new pairing, A French Twist - Beef Bacon & Burgundy. Guests can enjoy exciting new menu selections featuring signature House Smoked Beef Bacon, available à la carte or as a Prix Fixe Meal with Burgundy Pairings. Beef Bacon & Burgundy... If that’s not a recipe for perfection, we’re not sure what is.

For a limited time at any of the nine iconic Smith & Wollensky locations, guests who order two glasses of Joseph Drouhin Burgundy will receive a complimentary Cup O’ Bacon, featuring signature crispy House Smoked Beef Bacon with bleu cheese dip.

Guests can indulge in several other new menu selections prepared with the signature Beef Bacon, including Burrata appetizer, Iceberg Wedge Salad, Scallops with foraged mushrooms & balsamic glaze, and Beef S&Wellington with bacon wrapped tournedos, mushroom ragout & puff pastry. A Prix Fixe menu is also available, including choice of first and main courses paired with generous pours of Joseph Drouhin Burgundy; first course is served with Pouilly-Fuissé and main course is served with Chorey-les-Beaune.

Smith & Wollensky’s Beef Bacon, made from USDA Prime beef belly, is dry cured for five days and then house smoked over apple wood, creating a crispy texture, smoky flavor and particularly savory finish. Beef Bacon has been offered as a mainstay appetizer and side dish on the Winter Seasonal Menu - a beefy accompaniment that stands up to the steakhouse’s 28-day dry-aged Prime steaks.

“Steak and bacon are my two favorite things, so combining them was a natural experiment,” commented National Director of Culinary Development and Corporate Chef, Matt King. “To be able to create menu features built around an ingredient as unique and proprietary as Beef Bacon is a rare opportunity. We’re bringing together one-of-a-kind flavors in a series of dishes for our guests to experience firsthand the exclusivity of Beef Bacon.”

The two featured French Burgundies are from Maison Joseph Drouhin, a winery known for its rigorous attention to detail and quality. Guests can enjoy the Pouilly-Fuissé and Chorey-les-Beaune. As the birthplace of Chardonnay and Pinot Noir, Burgundy is a region with a rich wine heritage. After four generations of perfecting the art of winemaking in Burgundy, France, Maison Joseph Drouhin continues its pursuit of quality and excellence.
