New Chef Mark Ricker Plans Decadent Father's Day Special This Weekend
Chef Mark Ricker has taken over as executive chef at Zest Bistro in Barrack’s Row. For his first Fathers Day special he’s offering Kansas City ribs with a bourbon BBQ sauce, Maryland corn on the cob, and a loaded twice-baked potato. $24.95. Ricker joins Zest after having just returned from a national tour as chef for Backstage Bistro, a rock and roll touring company operation, where he helmed the kitchen facilities for such groups as the Rolling Stones. The DC native was executive sous chef at Bobby Vans Steakhouse. He began his career, after graduating with honors from the culinary program at the Art Institute of Washington, as a junior sous chef for Jose Andres at CafĂ© Atlantico and Minibar. He also served as a sous chef for two of Robert Wiedmaier’s restaurants, Brasserie Beck and Brabo.

Zest is committed to being environmentally friendly and has taken a number steps towards being green. Wood from the restaurant demolition was saved and made into the dining room tables and bar top, non-toxic paint was used on the walls, the water heater, sinks and toilets are highly energy efficient and the bamboo floors are a sustainable resource. Zest continues to look for ways to be green and will incorporate these efforts into their carryout packaging, as well.
