Local Artisans Celebrate Gluten Free Day with Special Edition Sweet Treat

Monday January 11th is National Gluten Free Day. To help those who choose to go gluten free but still have a sweet tooth, Union Kitchen residents The Cake Bake and Shameless Chef have partnered up to create a special edition gluten free DreamBite™.

The Cake Bake makes decadent buttercream cakes while the Shameless Chef destroys them and hand-rolls the pieces into tasty two-biters that are “small enough to satisfy a sweet tooth, without having to spend hours in the gym” says Sandie Diamond (aka the Shameless Chef).  This natural collaboration is “rolling out” a new gluten free DreamBite™ using The Cake Bake’s most popular gluten free option - carrot cake - rolled in coconut flakes and pecan nibs.


Gluten is a protein composite found in wheat, barley, rye as well as hybrids such as spelt and kamut and has been linked to gastrointestinal symptoms that often resemble Irritable Bowel Syndrome (IBS). Going gluten free has become popular in recent years. It originally gained popularity as an alternative treatment for people with Autism but it has also proven to be an effective treatment for those who have Celiac Disease. More and more people who have non-celiac gluten sensitivities (such as those associated with IBS) are also choosing this route.

Because of the presence of the gluten protein in most flours, desserts are usually out of the question for those on a gluten free regimen. This is changing rapidly as advances are made towards gluten-free bakery flours using brown rice, certain beans, amaranth or potatoes.
