Timber Pizza Co., the district's newest mobile wood-fire pizza business, will bring their pies and other inventive entrees from the road to the table for a pop-up at the Dolcezza Gelato factory. They have created this menu to serve as a preview of their future brick-and-mortar shop. The five-course pop-up will include beer pairings from DC Brau, including limited-edition brews. The menu features collaborations with DCity Smokehouse, DGS Delicatessen and Indigo. Dessert will be a Timber Pizza Co. and Dolcezza Gelato collaboration.
Timber founders Andrew Dana and Chris Brady have been serving farmer's markets and running food truck routes with an oven hitched to the back of a pick up truck since May 2014, when they joined Union Kitchen.
The dinner will be Friday, January 30 at Dolcezza Gelato Factory & Coffee Lab, 550 Penn Street, NE, with seatings at 6:00 p.m. and 8:30 p.m.
